Shaved Brussels Sprouts Salad & White Balsamic Vinaigrette

Here are the ingredients for the for the shaved Brussels Sprouts Salad I had in New Orleans at “Sylvains” in the French Quarter. Incase you missed it I wrote about eating at “Sylvain” here: BLOG It was one of the most original and delicious salads I have ever had. I haven’t made this myself yet, so if you do try it let me know how it works for you at home.

 

Salad

1 cup shaved brussels sprouts

1/4 cup diced granny smith apples

1 1/2 Tablespoons crushed, toasted hazelnuts

1 Tablespoon grated Pecorino Romano

1 1/2 ounce White Balsamic Vinaigrette

 

White Balsamic Vinaigrette

1 cup White balsamic vinegar

4 TBS Honey

4 cups Blended oil

1/2 cup Lemon juice

1 tsp Salt

  1. Terrific recipe, perfect for quiet meals at home for two and very popular with guests. I shave my own brussels sprouts with a sharp knife (very carefully!) and, now that I’ve got the technique down, often use them for other things (topping for soups, etc.). Be sure to follow Jane’s recipe exactly for a really amazing salad.

  2. I made this salad tonight and it was fabulous — a great combination of flavors and textures. It was wonderful with a nice salmon filet.
    I am always searching for healthy and delicious recipes, particularly salads and vegetables, and this one is my new favorite! Can’t wait to have it again.

  3. This brussels sprouts recipe looks so good until you get to the vinaigrette measurements. Really, 4 cups of blended oil and a cup of vinegar? Someone messed up and I would like it corrected if possible.

    • Goodness. I will look into it. I have followed this recipe, but who knows.

    • 3 to 1 and 4 to 1 are normal and standard ratios for dressing s of all sorts. If you want to use less the salad will taste sharp and watery. This recipe makes a vat of dressing. Should be enough for the whole sprout season. Use only 1 or 2 tablespoons of it on the salad, less if you want fewer calories.

    I’m a bit of a fat-so at the moment so I’m looking for some really tasty recipes and tried this one. I realize a lot of people don’t like brussel sprouts, but I’m the old school and they were part of my upbringing in the UK. That being said, I really enjoyed the recipe and cooking for healthy living. Please find me some more Jane; it’s a blast being able to tell people Jane Fonda gave me the recipe.I’m trying to convince people were the best of friends, but I don’t think anybody’s having any of it. It’s a cynical world don’t you think. Just as if I’d be lying to everybody.

    I have made the apple walnut bread, excellent for teatime. I have also just bought your new yoga dvd. I love yoga and this is perfect for me as I am older and have a weak back.
